“But I don’t have a Grill!”

How to cook your grass-fed & finished Black Angus steak when
 a grill isn’t available (or permitted)...

— Preheat oven to 275 degrees.
— Place a room temperature steak (we think rib-eye works best) in a ceramic or glass baking dish. Don’t season the steak yet.
— For a pink medium-rare steak, bake for exactly 15 minutes.
— Have a frying pan on the stove hot (but not smoking) with olive oil.
—Sear the steak for 1 minute or less on each side, just for color and a little carmelization.
—Season with salt and pepper to taste and serve.

Fresh Pasture Raised Chicken

For a 4 pound chicken:

Stuff cavity with your favorite herbs.

Top dress with our pastured butter and your favorite herbs.
Add white wine or other liquid in pan.
Cook for 1 hour at 500° (or 1.5 hours at 350°).
Chicken will be golden brown and succulent inside!

Our Favorite Dry Rub (enough for two steaks)

3 tbsp. garlic powder
2 tbsp. onion powder
1/2 tbsp. paprika
1/2 tsp. black pepper (course ground)
1/3 tsp. oregano
1/4 tsp. kosher salt
1/4 tsp. cayenne

For a Texan flavor, add 1/8 tsp. cumin and sprinkling of brown sugar.
